Queso Pulled Pork Enchiladas

Ingredients

 

4 cups shredded pulled pork 

1 package Warped Foods Queso prepared per directions on package

1 8-oz can green enchilada sauce, divided

1/3 cup water or chicken broth

12 corn tortillas (warmed until pliable) 

½ lime

Shredded lettuce 

1 cup fresh diced tomatoes

Optional Additions:  Sour Cream, green onions, cilantro, 

 

Preheat oven to 375.  In a saucepan, combine ¾ cup Warped Foods Queso and ½ cup green enchilada sauce and water or chicken broth.  (Can also be microwaved).  Bring to a low boil.  Reduce heat and simmer, uncovered for 3 minutes.   

 

Spread 2/3 cup of this mixture into a greased 13x9 in baking dish.  Stir pork into remaining sauce mixture.  Place 1/3 cup pork mixture down the center of each tortilla.  Roll up and place, seam side down, in prepared dish, atop the sauce mixture.  Combine remaining enchilada sauce and queso and pour over top covering most of the rolled tortillas.  Cover with foil and bake for 25 minutes.  Uncover and bake for another 10 minutes or until bubbling and just beginning to brown.   Squeeze lime over finished enchiladas.

 

Serve with shredded lettuce, diced tomatoes, green onions, fresh cilantro and sour cream.  Serves 4
